Taiwanese Fried Shallots, Sliced (Lard) 150g
Taiwanese red shallots, grown locally and hand-sorted piece by piece so nothing but shallot goes in the pan. Our own de-skinning and water-washing process removes every trace of grit. Frying is standardised and monitored daily, the oil is always fresh, and the result is the deep, honest aroma of shallots fried the way they have been in Taichung since 1980.
Product Features
Production and raw materials are both tightly controlled, and no food additives are permitted. We do not bulk our shallots out with wheat bran, we do not blend in imported fried shallots, and we never mix in cheaper shallots from other Taiwanese brands. What is on the label is what is in the jar.
Uses
Used in braised minced pork (lu rou), braised meats, zongzi, fish cake and meatball production, mung bean pastry, savoury pies, oil rice, savoury congee, milkfish congee, fried rice noodles, fried rice and fried noodles. It melts into the dish rather than sitting on top of it, so everything simply smells better and tastes better.
Storage
Store at room temperature, away from damp, heat and direct sunlight. Contains no preservatives, so refrigeration after opening keeps it at its best.

Fresh Taiwanese red shallots, de-skinned and water-washed until nothing but shallot remains. We fry them in high-quality natural lard, chosen because it is stable, naturally suited to frying, and holds its quality far better than refined oils. Decades of production experience go into that aroma, and our customers have told us for years that they can taste the difference.

Fried shallots come in coarse and fine cuts and in lighter and darker roasts. Pictured above is our standard cut - the most versatile of the range, and the one most often used for braised minced pork and traditional Taiwanese street food. The aroma is deep and unmistakable.
A Little Extra
Finer fried shallots are often folded into shallot meatballs, wontons, savoury tangyuan and steamed buns, where they give the filling a richer aroma and lift the whole dish.
