Let us talk about cooking. If you are interested in it, nothing about it is hard. With a recipe book open you can usually manage something respectable.
Cooking is a game. Get the basics right and you can vary it however you like — the people you feed will still say it was good.

Simple braised tofu

Heat oil in a wok and fry 80 g of minced pork until it breaks apart.

Add 2 tbsp of fried shallots and fry until fragrant.

Add 2 tbsp of chilli bean paste and fry until fragrant.

Add the tofu, cut into small pieces.

Add about 200 g of water and 1 tbsp of soy sauce.

Cook over a medium-low heat until the liquid has reduced.

Thicken with 1 tbsp of potato starch slurry.

Stir through, and it is done.

Scatter over spring onion and take it to the table. About as easy as it gets.


Note: we used firm tofu from a pack; silken tofu gives a softer, smoother result.
