
1. Cut the pork into small pieces, season with white pepper, salt and sugar and leave to take on the flavour, then toss with potato starch and poach in boiling water until cooked through.
2. Add broccoli or another vegetable, along with a little natural seasoning, your usual condiments and salt, to balance the sweetness of the pork broth.
3. In a separate pan of boiling water, cook the noodles, drain into a bowl and add a little shallot sauce.
4. Pour over the pork broth, arrange the pork on top, and an excellent everyday noodle soup is done.
Use fried shallots or shallot sauce, whichever you prefer
