Cheng-Chi applies scientific methods to manage oil quality internally. We use two official inspection tools recognized by national hygiene regulations: acid value test strips and a total polar compounds analyzer. While traditional cooking methods for shallot oil may not require such monitoring, we believe that every additional precaution means greater peace of mind.
